Carrot Ginger Miso


Ingredients:

  • 2 carrots, peeled and chopped

  • 1 tablespoon fresh ginger, peeled and chopped

  • 2 tablespoons white miso paste

  • 2 tablespoons rice vinegar

  • 1 tablespoon sesame oil

  • 2 tablespoons vegetable oil

  • 1 teaspoon honey

  • Water, as needed (to adjust consistency)

Instructions:

  1. Steam or boil the chopped carrots until soft (about 10–15 minutes). Drain and let cool slightly.

  2. In a blender or food processor, combine the cooked carrots, ginger, white miso paste, rice vinegar, sesame oil, vegetable oil, and honey.

  3. Blend until smooth, adding water gradually until you reach your desired dressing consistency.

  4. Taste and adjust: add more vinegar for tang, honey for sweetness, or ginger for a stronger kick.

  5. Pour into a jar or squeeze bottle and store in the refrigerator for up to one week.

This vibrant, flavorful dressing is perfect for salads, grain bowls, or as a dipping sauce.
