24 Oreo cookies, crushed 5 tablespoons unsalted butter, melted 16 oz cream cheese, softened 1 cup granulated sugar 2 teaspoons vanilla extract 2 cups heavy whipping cream 1 packet unflavored gelatin 1/4 cup cold water Blue food coloring 1 1/2 cups mini chocolate chip cookies, chopped 1 1/2 cups mini Oreos, chopped Additional mini cookies, Oreos, and chocolate chips for topping
Directions:
In a bowl, combine crushed Oreos and melted butter; press into the bottom of a springform pan to form the crust. Chill while preparing filling. Beat cream cheese, sugar, and vanilla until smooth. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes, then microwave 10 seconds to dissolve. Stir into cream cheese mixture. In another bowl, whip heavy cream to stiff peaks, then fold into the cream cheese mixture along with blue food coloring. Gently fold in chopped cookies and chopped Oreos. Spread filling over crust, smoothing the top. Chill for at least 6 hours or overnight until set. Before serving, top with more mini cookies, Oreos, and chocolate chips.
