Ingredients:
2 chicken sausages, sliced 1 medium sweet potato, sliced 1 cup broccoli florets 1 small zucchini, sliced 2 tbsp olive oil 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp garlic powder 1/2 tsp smoked paprika 1 tbsp sesame seeds (optional) 1 tbsp honey mustard or creamy dressing (optional) Step by Step:
Roast the Sweet Potatoes & Broccoli:
Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli with 1 tbsp olive oil, salt, pepper, and smoked paprika. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway. Sauté the Sausage & Zucchini:
Heat 1 tbsp olive oil in a pan over medium heat. Add sliced chicken sausage and cook until browned (about 5 minutes). Add zucchini and garlic powder, sautéing for another 4-5 minutes until tender. Combine & Toss:
In a large bowl, mix the roasted veggies with the sautéed sausage and zucchini. Sprinkle sesame seeds for extra crunch. Drizzle with honey mustard or a creamy dressing if desired. Serve & Enjoy!
