  • 500g fresh shrimp (medium or large size)

  • 2 eggs

  • 3 tablespoons all-purpose flour

  • 1 tablespoon cooking wine (optional, for added aroma)

1. Prepare and Marinate the Shrimp

2. Make the Batter

3. Frying – Double Frying Method for Maximum Crispiness

  • Heat oil in a deep frying pan over medium-high heat. You can test the oil by dropping a bit of batter in — it should sizzle immediately.

  • Dip each marinated shrimp into the batter, allowing excess to drip off, then carefully place it into the hot oil.

  • Fry until lightly golden (about 1–2 minutes per side), then transfer the shrimp to a paper towel-lined plate to remove excess oil.

  • Let the oil return to high temperature, then fry the shrimp a second time for another 30–60 seconds until deeply golden and crisp.

  • This double-frying technique ensures an ultra-crispy exterior that stays crunchy longer while keeping the shrimp inside tender and juicy.
