For the Cake:

2½ cups all-purpose flour

2 tbsp cocoa powder (unsweetened, just a hint)

1½ tsp baking powder

½ tsp baking soda

½ tsp salt

1½ cups granulated sugar

1 cup vegetable oil

2 large eggs

1 tsp vanilla extract

1 cup buttermilk (room temp)

1 tbsp white vinegar

1–2 tsp royal blue gel food coloring (adjust for desired shade)

For the Frosting Options:

Classic Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

3½ cups powdered sugar

1 tsp vanilla extract

For Garnish:

Fresh blueberries

Optional: edible glitter or shimmer spray for sparkle

Instructions

1. Bake the Cake:

Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.

In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.

In another bowl, beat sugar, oil, eggs, vanilla, and food coloring.

Add buttermilk and vinegar, mix well.

Gradually add dry ingredients and mix until smooth.

Divide batter into pans and bake for 25–28 minutes. Cool completely.

2. Make the Frosting:

Beat all ingredients until light and fluffy. Add blue coloring to match cake layers if desired.

3. Assemble:

Layer cake and spread frosting between layers.

Frost top and sides. Pipe rosettes or swirls and top with blueberries.

Chill 20–30 minutes before slicing for clean layers.
