REFRESHING BANANA ICE CREAM


A creamy, tropical treat that’s super easy to make and perfect for hot days!


Ingredients:

  • 5 ripe bananas

  • 2 cups (or 2 containers) of plain yogurt

  • 200ml sweetened condensed milk

  • 200ml coconut milk

  • Roasted peanuts (crushed, for topping)

  • Shredded coconut (for topping)


Instructions:

1. Prepare the bananas:

  • Peel the bananas and slice them into thin pieces.

  • Arrange them in a single layer on a tray or plate and freeze for at least 2–3 hours, or until solid.

2. Blend the base:

  • Once the bananas are frozen, place them in a blender or food processor.

  • Add the yogurt, sweetened condensed milk, and coconut milk.

  • Blend until smooth and creamy.

3. Assemble and freeze:

  • Pour the mixture into a mold, tray, or small containers.

  • Sprinkle roasted peanuts and shredded coconut on top for extra crunch and flavor.

  • Cover and freeze for 4–6 hours, or until firm.

4. Serve:

  • Take out the ice cream a few minutes before serving to soften slightly.

  • Scoop into bowls and enjoy your creamy, nutty banana ice cream!


🌟 Tips:

  • You can also pour the mixture into popsicle molds to make banana ice cream bars.

  • Want it extra rich? Add a bit of heavy cream or a spoon of peanut butter while blending.
