Lemon Meringue Cheesecake 
Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon lemon zest
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 4 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
Instructions:
1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
2. Mix graham cracker crumbs and melted butter, then press into the bottom of the pan to form the crust.
3. In a large bowl, beat cream cheese, sugar, and lemon zest until smooth.
4. Add eggs one at a time, then mix in sour cream, lemon juice, and vanilla extract.
5. Pour the mixture over the crust and bake for 45-50 minutes until set.
6. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
7. Gradually add sugar and beat until stiff peaks form.
8. Spread meringue over the cheesecake and bake for an additional 10-15 minutes until golden.
9. Cool completely, then refrigerate for at least 4 hours.
10. Slice and serve chilled.
