Pickled Red Onions

Quick, tangy, and absolutely irresistible—these onions add the perfect zing and color to any dish!

๐Ÿ“ Ingredients:

  • 2 medium red onions, peeled and thinly sliced

  • ½ cup white vinegar (or use apple cider vinegar for a fruitier kick)

  • ½ cup water

  • 1 teaspoon salt

  • 1 teaspoon sugar (optional but balances the acidity)

  • 1 bay leaf

  • A few whole peppercorns (black or mixed for extra aroma)

๐Ÿ’ก Optional Add-ins for extra flavor:

  • A garlic clove (lightly smashed)

  • A few coriander seeds or mustard seeds

  • A slice of fresh jalapeño or a pinch of chili flakes for heat

๐Ÿ”ช Preparation Steps:

1๏ธโƒฃ Slice the Onions

Peel the red onions and slice them as thinly as possible using a sharp knife or mandoline. Thin slices absorb the brine quickly and evenly. Place them into a clean, heatproof glass jar or bowl.

2๏ธโƒฃ Make the Brine

In a small saucepan, combine:

  • Vinegar

  • Water

  • Salt

  • Sugar

  • Bay leaf

  • Peppercorns

Bring to a gentle boil, stirring to dissolve the salt and sugar completely.

3๏ธโƒฃ Pour the Brine

Carefully pour the hot brine mixture over the sliced onions, making sure they’re fully submerged. Press down with a spoon if needed.

4๏ธโƒฃ Let It Pickle

Allow the onions to sit at room temperature for at least 1–2 hours. For best flavor and vibrant color, refrigerate and let them pickle overnight.

๐ŸงŠ Storage:

Keep in a sealed container in the refrigerator for up to 2–3 weeks. The flavor gets better over time!

๐Ÿฝ๏ธ Best Pairings:

These tangy pickled onions are the ultimate finishing touch. Use them to elevate:

  • ๐ŸŒฎ Tacos – Add brightness and crunch

  • ๐Ÿฅฉ Grilled meats – Perfect contrast to rich flavors

  • ๐ŸŸ Fish dishes – Especially delicious with ceviche or grilled fish
