
π₯ Roasted Potatoes with Baked Feta and Garlic

β Ingredients:

1–2 large baking potatoes, washed and cubed
-
7 oz (200 g) block of feta cheese
-
2 tablespoons olive oil, divided
-
1 teaspoon dried thyme
-
1 teaspoon dried oregano
-
1 teaspoon salt
-
1 teaspoon black pepper
-
1 head of garlic, top sliced off (leave cloves in skin)
-
1 lemon, quartered
-
1 tablespoon honey
-
¼ cup (20 g) fresh basil, chopped (or parsley for variation)
π³ Instructions:

Preheat oven to 400°F (200°C).
Line a baking sheet or roasting dish with parchment paper. -
Prep the potatoes:
Toss cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper. Spread them out evenly on one side of the baking dish. -
Add garlic & lemon:
Place the garlic head (cut-side up) and lemon wedges in the dish with the potatoes. -
Place the feta:
Put the whole block of feta cheese in the center or on the other side of the pan. Drizzle with the remaining olive oil and a light sprinkle of oregano. -
Roast:
Roast in the oven for 35–40 minutes, or until potatoes are golden and crispy, and feta is soft and lightly browned. -
Finishing touch:
Once out of the oven, drizzle the roasted feta with honey while warm for a sweet-savory balance. -
Serve:
Squeeze roasted lemon over everything, mash the garlic cloves out of their skins and mix into the feta or potatoes if desired. -
Garnish:
Sprinkle chopped fresh basil or herbs of choice over the top and serve warm!
