Glazed Salmon Bites Bowl with Ultra-Generous Creamy Mango-Avocado Salsa and Lime Zest

Yields: 2 servings
Prep time: 20 minutes
Cook time: 10-15 minutes

Ingredients:

For the Glazed Salmon Bites:

1 lb skinless salmon fillet, cut into 1-inch cubes
1 tablespoon olive oil or avocado oil
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon honey or maple syrup
1 clove garlic, minced
½ teaspoon ginger, grated (optional)
Pinch of red pepper flakes (optional, for a touch of heat)
Salt and pepper to taste
For the Ultra-Generous Creamy Mango-Avocado Salsa:

1 ½ ripe mangoes, peeled and diced
1 ½ ripe avocados, diced
½ cup finely chopped red onion
½ cup chopped fresh cilantro
3 tablespoons lime juice
1 ½ tablespoons mayonnaise or Greek yogurt (for extra creaminess)
Pinch of salt
For the Bowl:

1 cup cooked rice (sushi rice, jasmine, or your preference)
Zest of 1 large lime
Optional toppings: toasted sesame seeds, extra cilantro sprigs
Instructions:

Prepare the Salmon: Pat the salmon cubes dry with a paper towel. In a medium bowl, whisk together olive oil (or avocado oil), soy sauce (or tamari), honey (or maple syrup), minced garlic, grated ginger (if using), red pepper flakes (if using), salt, and pepper. Add the salmon cubes and toss gently to coat. Let it marinate for at least 10 minutes.
Make the Ultra-Generous Creamy Mango-Avocado Salsa: While the salmon marinates, prepare the salsa. In a medium bowl, gently combine the diced mangoes, diced avocados, red onion, and cilantro. In a small bowl, whisk together the lime juice, mayonnaise or Greek yogurt, and salt. Pour the dressing over the mango and avocado mixture and gently fold to combine, ensuring a creamy consistency while keeping some chunks.
Cook the Salmon: Heat a non-stick skillet over medium-high heat. Add the marinated salmon bites in a single layer (cook in batches if necessary). Cook for 2-3 minutes per side, or until the salmon is cooked through and slightly caramelized from the glaze.
Assemble the Bowls: Divide the cooked rice between two bowls. Arrange the glazed salmon bites on top of the rice. Spoon an extra generous amount of the creamy mango-avocado salsa over and around the salmon, letting it be the star of the bowl.
Elevate with Lime Zest: Finish each bowl with a generous sprinkle of fresh lime zest, adding a bright and aromatic lift to the flavors. If desired, garnish with toasted sesame seeds and extra cilantro sprigs. Serve immediately and savor the delightful combination!
Tips for Maximum Enjoyment:

Prioritize Ripe Fruit: Use perfectly ripe mangoes and avocados for the best flavor and creamy texture in the salsa.
Don't Overmix the Salsa: Gently fold the ingredients to maintain the distinct textures of the mango and avocado.
Fresh Lime is Key: Use freshly squeezed lime juice for the salsa and freshly zested lime for the final touch – it makes a significant difference.
Adjust Sweetness/Saltiness: Taste the glaze and salsa and adjust the honey/maple syrup or salt to your preference.
Serve Immediately: While the salsa can be made slightly ahead, it's best to assemble the bowl just before serving to maintain the freshness of all the components.
