Low Carb Pizza Bowls


All the cheesy, saucy goodness of pizza—without the carbs. A quick and customizable dinner idea!


πŸ›’ Ingredients (Serves 2–3):

  • 1 tbsp olive oil

  • ½ medium onion, diced

  • 1 green bell pepper, chopped

  • 1 cup mushrooms, sliced

  • 1 cup cooked Italian sausage or pepperoni (or both)

  • 1½ cups low-sugar marinara or pizza sauce

  • 1½ cups shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • ½ tsp garlic powder

  • Salt & black pepper, to taste

  • Optional toppings: sliced olives, banana peppers, cooked chicken, spinach, crushed red pepper


🍳 Instructions:

1️⃣ Sauté the Veggies:

In a skillet, heat 1 tbsp olive oil over medium heat. Add onions, bell peppers, and mushrooms. Cook for 5–7 minutes until soft and lightly caramelized. Season with a pinch of salt, pepper, garlic powder, and Italian seasoning.

2️⃣ Prepare the Filling:

If using Italian sausage, make sure it's browned and fully cooked. If using pepperoni, you can slice or chop it. Combine your meat of choice with the sautéed vegetables.

3️⃣ Layer in Oven-Safe Bowls:

Use 2–3 small ramekins or oven-safe bowls. In each bowl, layer:

  • 2–3 tbsp marinara sauce

  • A portion of the veggie and meat mixture

  • Sprinkle of mozzarella cheese

  • Repeat layers until the bowl is nearly full

  • Finish with a generous sprinkle of mozzarella and a touch of Parmesan on top

4️⃣ Bake:

Preheat oven to 400°F (200°C). Place bowls on a baking sheet and bake for 10–12 minutes, or until the cheese is bubbly and golden.

For extra browning, broil on high for 1–2 minutes—watch closely!

Let cool slightly, then dig in with a fork or spoon. Garnish with fresh basil, crushed red pepper, or a drizzle of olive oil if desired.
