1 tablespoon cream cheese or grated cheese (optional for extra creaminess)

Pinch of nutmeg (optional but adds amazing warmth)

1 small chili pepper (optional, for heat)

Optional: bouillon cube or seasoning powder (e.g., Knorr) for a deeper savory flavor

Prep the spinach
Wash spinach thoroughly and chop if using fresh. If using frozen, make sure to drain out excess liquid. -
Sauté the aromatics
Heat olive oil or butter in a pan over medium heat. Add chopped onion and sauté until soft and golden. Add garlic and chili (if using) and stir until fragrant (about 30 seconds). -
Cook the spinach
Add the spinach to the pan. Cook for 3–5 minutes, stirring occasionally, until wilted and the liquid starts to evaporate. -
Make it creamy
Pour in heavy cream or coconut milk. Stir in cream cheese or shredded cheese if desired. Season with salt, pepper, and a pinch of nutmeg. -
Simmer
Let it simmer for 2–3 minutes until thick and creamy. Taste and adjust seasoning. -
Serve hot
Perfect as a side dish with rice, yams, grilled chicken, beans, or even pasta!
