Cookie Base

  • 2 cups (200 g) crushed chocolate cookies (e.g., Oreos, without filling)

  • ½ cup (115 g) unsalted butter, melted

Red Velvet Cake Layer

  • 1½ cups (190 g) all-purpose flour

  • 1 cup (200 g) granulated sugar

  • 2 tbsp unsweetened cocoa powder

  • 1 tsp baking soda

  • 1 cup (240 ml) buttermilk

  • ½ cup (120 ml) vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 tsp white vinegar

  • 1–2 tsp red food coloring

Cheesecake Layer

  • 16 oz (450 g) cream cheese, softened

  • ½ cup (100 g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

Cookie Dough Topping

  • ½ cup (115 g) unsalted butter, softened

  • ½ cup (100 g) brown sugar

  • ¼ cup (50 g) granulated sugar

  • 1 tsp vanilla extract

  • 1 cup (125 g) all-purpose flour (heat-treated if necessary)

  • ½ cup (90 g) mini chocolate chips

Ganache & Decorations

  • 1 cup (175 g) semi-sweet chocolate chips

  • ½ cup (120 ml) heavy cream

  • Extra red velvet crumbs & mini chocolate chips for garnish

1️⃣ Make the Cookie Base

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.

  2. Combine crushed cookies and melted butter in a bowl. Press evenly into the pan.

  3. Bake for 8–10 minutes. Let it cool completely.


2️⃣ Make the Red Velvet Cake Layer

  1. In a large bowl, whisk flour, sugar, cocoa powder, baking soda, and a pinch of salt.

  2. In another bowl, mix buttermilk, oil, eggs, vanilla, vinegar, and red food coloring.

  3. Combine wet and dry ingredients until just mixed.

  4. Pour into a greased 9-inch cake pan and bake for 25–30 minutes (or until a toothpick comes out clean).

  5. Cool completely and level the top if needed.


3️⃣ Make the Cheesecake Layer

  1. Beat cream cheese and sugar until smooth.

  2. Add eggs one at a time, mixing well. Stir in vanilla.

  3. Pour over cooled cookie base in springform pan.

  4. Bake at 325°F (160°C) for 35–40 minutes, until set.

  5. Cool and chill for at least 4 hours.


4️⃣ Make the Cookie Dough Topping

  1. Cream butter, brown sugar, and granulated sugar until smooth.

  2. Mix in vanilla.

  3. Add flour gradually and mix well.

  4. Fold in chocolate chips.


5️⃣ Assemble the Cake

  1. Place red velvet cake layer over the chilled cheesecake layer.

  2. Spread cookie dough evenly on top.

  3. For ganache: heat cream, pour over chocolate chips, stir until smooth. Drizzle on top.


6️⃣ Decorate & Chill

  • Sprinkle with red velvet crumbs and extra chocolate chips.

  • Pipe ganache or frosting swirls if desired.

  • Chill for at least 2 hours before slicing.
