A light, creamy, no-bake dessert with layers of chocolate, fresh berries, and mousse magic!


🧁 Ingredients

Chocolate Crust Layer

  • 1½ cups chocolate cookie crumbs

  • ¼ cup unsalted butter, melted

  • 2 tbsp granulated sugar


Chocolate Base Layer (Optional but decadent!)

  • 100g semi-sweet chocolate (melted)

  • ¼ cup heavy cream


White Chocolate Mousse Cheesecake

  • 200g white chocolate (chopped)

  • 2 tbsp milk

  • 1½ cups cream cheese (room temperature)

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup cold heavy whipping cream


Topping

  • Sweetened whipped cream (piped)

  • Dark chocolate shavings

  • Fresh strawberry halves πŸ“

1️⃣ Make the Crust

  • In a bowl, mix cookie crumbs, melted butter, and sugar until combined.

  • Press firmly into the bottom of a lined springform pan or square tray.

  • Chill in the fridge for 15 minutes.


2️⃣ Optional Chocolate Base

  • Melt chocolate and cream together until smooth.

  • Spread a thin layer over the chilled crust.

  • Chill again until firm.


3️⃣ Make the White Chocolate Mousse Cheesecake

  • Melt white chocolate with milk until smooth. Let cool slightly.

  • In a separate bowl, beat cream cheese, powdered sugar, and vanilla until fluffy.

  • Stir in melted white chocolate.

  • Whip heavy cream to stiff peaks and gently fold into the mixture until airy and smooth.


4️⃣ Assemble the Cake

  • Pour the mousse mixture over the prepared crust (and chocolate base if using).

  • Smooth the top with a spatula.

  • Chill for at least 6 hours, or overnight, until fully set.


5️⃣ Decorate & Serve

  • Pipe whipped cream swirls along the top.

  • Garnish with dark chocolate shavings and a fresh strawberry half on each slice.

  • Serve chilled for the perfect summer treat!
