🧁 Ingredients

For the Cake:

  • 1 box white cake mix (plus eggs, oil, and water as listed on the box)

  • 1 box (3 oz) strawberry gelatin (like Jell-O)

  • 1 cup boiling water

  • ½ cup cold water

For the Topping:

  • 2 cups heavy whipping cream

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1½ cups fresh strawberries, sliced

🍰 Instructions

  1. Bake the Cake

Prepare the white cake batter according to the instructions on the box.
Bake in a 9x13 inch pan.
Allow to cool for about 10 minutes once out of the oven.

  2. Poke the Cake

Use a straw, skewer, or wooden spoon handle to poke holes evenly across the top of the warm cake, about 1 inch apart.

  3. Add the Strawberry Filling

In a bowl, dissolve the strawberry gelatin in 1 cup of boiling water.
Stir in ½ cup of cold water.
Pour the mixture slowly and evenly over the entire cake, making sure it seeps into the holes.
Refrigerate the cake for at least 2 hours to allow it to set.

  4. Make the Whipped Cream Topping

In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread the whipped cream evenly over the chilled cake.

  5. Decorate

Arrange sliced fresh strawberries over the top.
For an extra decorative touch, pipe a swirl of whipped cream and place a halved strawberry on top.

✨ Light, luscious, and loaded with fresh flavor—this Strawberry Poke Cake is a crowd-pleaser for birthdays, brunches, and beyond!
