  • 2 cucumbers

  • Chili and garlic

  • Seasonings: Salt, roasted sesame seeds, vegetarian fish sauce, sugar, vinegar

1. Prepare the cucumbers:
Wash the cucumbers and slice them thinly. Add 1 tablespoon of salt, mix well, and let sit for 10 minutes. Then rinse thoroughly with water and squeeze out all excess moisture.

2. Make the dressing:
In a small bowl, mix:

  • 2 tablespoons vegetarian fish sauce

  • 1 tablespoon sugar

  • 1 tablespoon vinegar (or lime juice)

  • 1 tablespoon minced chili and garlic

  • ½ tablespoon hot oil
    Stir well to combine.

3. Combine and serve:
Place the cucumber slices in a large bowl. Pour the dressing over and sprinkle with roasted sesame seeds (or substitute with roasted peanuts). Mix everything well and let sit for about 15 minutes to absorb the flavors.
