Ingredients (Serves 2)
For the Chicken: 2 boneless chicken breasts , 1 tbsp olive oil , 1 tsp smoked paprika , 1 tsp garlic powder , salt & pepper to taste For the Guacamole: 1 ripe avocado , 1 tbsp lime juice , 1 tbsp chopped cilantro , salt to taste For the Salsa: 1 large tomato (diced) , 1/4 red onion (finely chopped) , 1 tbsp chopped cilantro , 1 tbsp lime juice , salt to taste
Instructions Marinate the Chicken: Rub the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper. Let them sit for 15 minutes to soak in the flavors. Make the Guacamole: In a bowl, mash the avocado with a fork. Mix in lime juice, cilantro, and a pinch of salt. Set aside. Prepare the Salsa: In another bowl, combine diced tomato, red onion, cilantro, lime juice, and salt. Stir well and let it rest. Grill the Chicken: Heat a grill pan or skillet over medium-high heat. Grill the chicken for 5-6 minutes per side until golden and cooked through (internal temp 165°F/75°C). Slice into strips. Assemble the Plate: Place the grilled chicken on a plate. Add a generous scoop of guacamole and salsa on the side. Garnish with extra cilantro if desired.
