
Chicken Pasta Salad

β¨ Ingredients:

1 chicken breast
-
2 celery stalks πΏ

2 pieces of carrot π₯
-
1 tablespoon salt π§ (divided for chicken and pasta)
-
200 g (7 oz) spiral pasta π
-
½ cup heavy cream π₯
-
½ cup mayonnaise
-
½ teaspoon black pepper
-
½ cup chopped onion π§
-
½ cup chopped bell pepper πΆοΈ
-
½ cup cooked peas
-
½ cup cooked carrot π₯
-
½ cup chopped celery
-
Chopped cilantro to taste πΏ
β¨ Instructions:
1οΈβ£ Cook the Chicken:
In a pot, add the chicken breast, 2 celery stalks, 2 pieces of carrot, and ½ tablespoon salt π§.
Fill with water and cook over medium heat for 25 minutes.
Remove the chicken, let it cool, shred into fine strips, and set aside. π
2οΈβ£ Cook the Pasta:
In a pot with boiling water, add the spiral pasta and the remaining ½ tablespoon of salt π§.
Cook until al dente, drain, and rinse under cold water to cool.
3οΈβ£ Prepare the Dressing:
In a small bowl, mix the heavy cream, mayonnaise, and black pepper until smooth. Set aside.
4οΈβ£ Final Mix:
In a large bowl, combine the shredded chicken, cooked pasta, onion, bell pepper, peas, carrot, and celery.
Pour the dressing over the mixture and toss until everything is well coated.
Garnish with chopped cilantro to taste. Refrigerate for 15 minutes before serving for best flavor.
