Easy Microwave Lemon Curd

Ingredients

  • ½ cup unsalted butter

  • 1 ¼ cups granulated sugar

  • 3 large eggs, room temperature

  • 1 egg yolk, room temperature

  • 1 cup fresh lemon juice

  • Zest of 3 lemons


Instructions

  1. Melt the butter in the microwave and set it aside to cool slightly.

  2. In a microwave-safe mixing bowl, whisk together the sugar, eggs, and additional egg yolk until well combined.

  3. Stir in the lemon juice and zest, followed by the melted butter.

  4. Microwave the mixture on 50% power for 1 minute, then stir.

  5. Continue microwaving on full power (100%) in 1-minute intervals, stirring after each, until the curd thickens enough to coat the back of a spoon. This usually takes 4–6 minutes in total. (Note: It will continue to thicken as it cools.)

  6. For a silky-smooth finish, strain the curd through a fine-mesh sieve to remove zest.

  7. Pour the curd into sterile jars and refrigerate. It will keep for up to 3 weeks.

  • This recipe yields approximately 1 pint (2 cups) of lemon curd.

  • For extra smoothness and flavor, always use freshly squeezed lemon juice and zest.
