🍰💗 A fruity twist on the classic! This Raspberry Tres Leches Cake is ultra-moist, rich, and lightly sweet with bursts of tart raspberry in every bite. Soaked in a luscious three-milk mixture and topped with whipped cream and berries—it's the dessert of your dreams! 🥛✨

Ingredients:

For the Cake:

1 cup all-purpose flour

1½ tsp baking powder

¼ tsp salt

5 large eggs, separated

1 cup granulated sugar, divided

⅓ cup whole milk

1 tsp vanilla extract

For the Tres Leches Mixture:

1 can (12 oz) evaporated milk

1 can (14 oz) sweetened condensed milk

½ cup heavy cream

For the Topping:

1 cup heavy whipping cream

2 tbsp powdered sugar

1 tsp vanilla extract

1½ cups fresh raspberries

Raspberry sauce or jam (optional, for drizzling)

Instructions:

Bake the Sponge Cake:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat egg yolks with ¾ cup sugar until pale and thick (about 2 minutes). Stir in milk and vanilla.
Gently mix in the dry ingredients.
In another bowl, beat egg whites until soft peaks form, then gradually add the remaining ¼ cup sugar and beat until stiff.
Fold egg whites into the yolk mixture in batches, being careful not to deflate.
Pour batter into the baking dish and smooth the top.
Bake for 25–30 minutes or until golden and a toothpick comes out clean.

Add the Tres Leches:
In a bowl, whisk together evaporated milk, sweetened condensed milk, and heavy cream.
Once the cake has cooled slightly, poke holes all over the surface using a fork or skewer.
Slowly pour the milk mixture evenly over the cake. Refrigerate for at least 4 hours, or overnight.

Whip the Cream & Top It Off:
Beat heavy whipping cream with powdered sugar and vanilla until soft peaks form.
Spread evenly over the chilled cake.
