Sure, you can find countless cheese options at the supermarket. But nothing compares to the joy of making your own fresh cheese at home: healthier, cheaper, and so much tastier. Today, we’re sharing a super easy recipe that will make you feel like a cheese-making pro.
🧂 Ingredients You Likely Already Have:

1 liter of fresh whole milk

1 plain natural yogurt (unsweetened)

Juice of half a lemon

1 absorbent cotton cloth or cheesecloth

1 mold (approx. 12 cm diameter)

1 large bowl

Salt (optional)
👩🍳 Step-by-Step: How to Make Homemade Fresh Cheese

Heat the milk to 90 °C (194 °F) for 15 minutes (do not let it boil).

Add the yogurt and lemon juice, and gently stir until fully combined.

Preheat the oven to 32 °C (90 °F) and pour the mixture into the mold. Bake for 2 minutes, until the whey starts separating and turns slightly yellow.

Cover the mold with the folded cheesecloth, letting the edges hang over the sides, and place the mold over the bowl.

Pour the mixture through the cloth. The whey will drain into the bowl, while the curds remain in the cloth.

Squeeze the cloth firmly to remove as much liquid as possible.

Return the curds to the mold, press down tightly, and place something heavy on top (like a can).

Refrigerate for 30 minutes.

Remove from the fridge, take off the cloth, and add salt to taste, if desired.

Transfer the cheese to a clean mold and let it rest in the fridge for at least 8 hours.
