Light Lemon Mousse


This refreshing, airy Light Lemon Mousse is the perfect balance of sweetness and citrus, ideal for summer days or anytime you crave something light and zesty.


πŸ‹ Ingredients:

  • 3 lemons (juice and zest)

  • 3 egg whites

  • 100 g (½ cup) sugar

  • 250 ml (1 cup) heavy cream

  • 1 tsp powdered gelatin (or 3 gelatin sheets)

  • 2 tbsp hot water (for dissolving gelatin)

  • 1 tsp vanilla extract (optional)

  1. Prepare the Lemon Base

    • Zest and juice the lemons into a bowl. Set aside.

  2. Dissolve the Gelatin

    • If using powdered gelatin, sprinkle it over 2 tbsp of hot water. Stir until fully dissolved.

    • If using gelatin sheets, soak them in cold water for 5 minutes, then drain and dissolve in hot water.

  3. Whip the Cream

    • In a cold mixing bowl, beat the heavy cream until soft peaks form. Chill in the fridge while preparing the rest.

  4. Beat the Egg Whites

    • In another bowl, beat the egg whites until they begin to foam. Gradually add the sugar while continuing to beat until stiff peaks form.

  5. Combine Lemon, Gelatin & Cream

    • Mix the lemon juice and zest with the dissolved gelatin and optional vanilla extract. Gently fold in the whipped cream until smooth.

  6. Fold in the Egg Whites

    • Carefully fold the stiff egg whites into the lemon-cream mixture in batches. Use a spatula and gentle movements to preserve the airy texture.

  7. Chill

    • Spoon the mousse into individual glasses or a large serving bowl. Cover and refrigerate for at least 3–4 hours, or until set.
